Flat mushrooms (10 to be filled, 2 for filling)

French shallots, finely chopped

Garlic, finely chopped

White wine or apple cider vinegar

Parmesan cheese, grated

Fresh breadcrumbs

Egg, beaten lightly

cream

Fresh parsley (chopped) and thyme

Olive oil

 

Method

  1. Chop two flat mushrooms finely.
  2. Heat olive oil in fry pan and cook shallots and garlic over medium heat for 2 minutes or until soft.
  3. Add chopped mushrooms and cook for a further 2 minutes.
  4. Add vinegar and cook until all moisture is absorbed. Remove from heat and cool slightly.
  5. Add parmesan, fresh breadcrumbs, and herbs and mix well.
  6. Add beaten egg and cream and mix well.
  7. Remove stems from mushrooms and place on baking paper lined tray.
  8. Preheat oven on Fan Grill to 200°
  9. Fill mushroom cups with filling. Place in oven and cook for 10 minutes.
  10. Serve immediately.
